SW Black Bean Burritos
Ingredients:
8-10 Chicken Tenders (skinless)
1 tsp cumin
1 tsp chili powder
½ tsp Hot Sauce
1 tbsp Olive Oil
1 med onion chopped
4 cloves garlic (minced or pressed)
1 15oz can black beans – drained and rinsed
4 tbsp BBQ Sauce
1 heart of Romain chopped up
2 tomatoes chopped (I prefer seeded as well)
5 large flour tortillas
Directions:
Mix cumin, chili powder and hot sauce in small shallow bowl. Rub chicken with mixture and place in pan on high. Cook tenders 3 & ½ min each side, then remove from heat. While chicken is cooking heat skillet to medium-high. Put olive oil in pan. Cook onions and garlic for about 5 minutes or until tender. Add beans and BBQ sauce. Chop up chicken and add to BBQ sauce mixture. Mix together and simmer 3 minutes.
Place chicken and bean mixture in the center of the tortilla. Top with lettuce and tomatoes.
· Also good with shredded cheese, scallions and sour cream toppings.
· You can also substitute 4-5 skinless Chicken breasts for the chicken tenders

A Trace of Gratitude



It was out of necessity that I started Sweet December. Both to make a little extra income and to quench my creative thirst. Crafting and creating has always been a passion of mine. Thanks to my mother, growing up I always had a craft project to work on. I never out grew the desire to create new and fun things. Now that I have a daughter and a son of my own, I have a whole new direction to explore and a need to make fun and functional baby accessories.
